Late summer is the perfect season for one of our favorite mushrooms - Chicken of the Woods. These brilliant golden mushrooms form around the base of oak trees in late summer/early fall and have a distinctive meaty texture and flavor. We blended foraged Chicken of the Woods mushrooms into our handcrafted soy sauce last fall and have patiently waited for this lovely sauce to mellow and mature. The result is a beautiful soy sauce that can not be compared. Rich, meaty flavor packed with umami in a perfectly balanced seasoning.
