Gossamer is inspired by the classic Camembert style bloomy rind and made with pasteurized milk. We find the flavors to be delicate and reminiscent of clean milk with a soft and supple cheesecake like center. Gossamer is a wonderful entry way cheese to any foodie as we find the flavors to very approachable yet well executed. Enjoy Gossamer with sparkling wine, dried apricots and good company.
