This ain’t your standard octopus fare. Slivers of garlic and whole chilis sparkle on the palette with pops of umami and spice. A belly-warming saucer of Spanish olive oil enhances the meaty slices of octopus, responsibly sourced from the prolific waters of Galicia, Spain. Think roasted chicken with root veggies and a pinch of sea salt.

This octo will play nicely with potato salad tossed with briney green olives, smoked paprika, and crispy chorizo bits.
