Long and narrow, Queen of Malinalco ripens from green to lemon yellow, just like a round tomatillo, and there are so many ways to play with the flavors: Raw or roasted, coarsely chopped or pureed, with garlic and cumin, shallots and cilantro, grilled on kabobs or tossed on tacos. Queen of Malinalco Tomatillo when fully ripe is fruiter and sweeter than the standard tomatillo species, being sweet enough to each fresh, but also makes a great salsa addition or salse verde that has fruitier “pineapple and mango-ish” highlights. The largest fruits can also be stuff like a mini pepper.
