Romanesco (by Weight)

Just one look at this stunning vegetable and you'll want to scream "I WANT TO EAT THAT!" Seriously, though.  Those fractal spirals that resemble mini Christmas trees in cauliflower form.  Nature is so cool.   Hailing back to 15th century Italy, Romanesco is sweeter, milder and nuttier than cauliflower or broccoli, and is delightful raw, steamed and lightly roasted. Use it like you would broccoli or cauliflower, just don't overcook it so you can keep it's fabulous shapes.
