Radicchio, "Variegato de Luisa"

Certified Organic. Named for a small town in Italy's Veneto region, Luisa's pale and flecked leaves have a mild bitterness and it's tender leaves are crisp and crunchy, akin to lettuce. (Think iceberg meets romaine for an after-dinner amaro). Beautiful in salads shredded raw or grilled in wedges to bring out it's sweetness.  (Kitchen Garden Farm in Sunderland, MA)
