Though plumper than most, this potato is still considered a fingerling. Radiant rose-red skin and deep yellow flesh with an occasional red ring make this potato stand out. Creamy, smooth texture with exceptional flavor lends itself well to salad with thinly-sliced red onions and chunks of crisp cucumbers. French fingerling potatoes are perfectly sized for roasting either whole or halved with complimentary fresh herbs and dry spices, and they hold their shape well when cooked which makes them an excellent casserole and salad potatoes. French fingerlings can also be browned in a skillet and then slow braised in broth to finish.
