Plums: Prune

The last stone fruits of summer, prune plums are not to be missed.  They're fine eating out of hand, but these beauties really should be cooked.  Being smaller and less juicy than their cousins, the flavor concentrates into jammy deliciousness and their bright yellow flesh turns the most intense fuchsia color.  Bake them into cakes or tortes, grill and pop them on stracciatella smothered toast, roast them alongside chicken or pork!
