Nettles

A favorite of foragers, these leafy greens have a rich, earthy, spinach-like flavor with a slight tang.  Yes, they sting.  (Beware those little stingers!) But, cooking the tender leaves solves that problem. Then you can sauté, puree into soups, steep a tea (it's a fantastic spring tonic), make risotto, pasta, pesto... the list goes on! Nevermind its health benefits: it can help with inflammation, arthritis, and seasonal allergies.
