On the rocky mid coast of Maine, lives Meadow and Maple Farm. It is 12 wooded acres thick with sugar maple trees…Several years ago I started making maple syrup, tapping the trees by hand just when it starts to get above freezing in the late winter, collecting the clear cold sap the old fashioned way, in buckets and cooking it down all day over an open wood fire until it is sweet and Amber.

Theres something special about this syrup, that gives it a very unique and delicious taste. It could be there micro climate, the clean and crisp Maine air, the minerals in the snow melt in March or the trees themselves but either way it is sweet and a little bit smoky, it is special enough to share with your friends and special enough to want to keep it for yourself!

Enjoy this amazing syrup on Sunday mornings, pour generously on your French toast or dip your bacon in it! (many people tell me they lick the plate when they are done!)

Like the vintages of wine, it is never the same twice, every year has its own special flavor profile.
