Fresh lemongrass is featured in many South East Asian dishes.  You might be familiar with it's bright zingy notes it lends to many Thai dishes and curries.  It has a bright lemony flavor, with hints of ginger.  Usually the bulbs are pounded and mashed into savory dishes, but the tops make a delightful tea or can be used to flavor pickles or marinades. Lemongrass is also reported to have many health benefits: it's anti-inflammatory, may reduce anxiety, ease digestive issues, and help control blood pressure because it's high in potassium.
