Fava Beans (by the pound)

Also known as Broad or Faba, Fava Beans are one of the most ancient plants in cultivation, and are known to have been part of the Eastern Mediterranean diet as far back as 6000 BCE.  Nutritionally dense, favas are high in lean protein, dietary fiber, folate, magnesium, potassium and iron.  You can see why this lowly bean has stayed a dietary staple in many Mediterranean cuisines. 

To eat, the green pods are usually shelled, the beans extracted, blanched and peeled before adding to salads, soups, hummus and so on.  (I like them sautéed with green garlic and mint.) However, if very young and tender, the pods can also be cooked and eaten! I particularly enjoy them lightly grilled and showered with parmesan and black pepper.  The little beans steaming in the charred pods.  Although their preparation is labor intensive, I assure you they are worth the extra work!
