A bright, rich, creamy cylinder of grass fed cow’s milk cheese encased in a delicate mushroomy bloomy rind. The name Eidolon comes from a Walt Whitman poem and means ‘an object’s perfect form; it’s an ideal, almost unattainable’. This Eidolon certainly comes close! Beneath the white bloomy rind there is a thick layer of supple, gooey paste, while the interior remains firmer, with a light, fluffy, almost cheesecake-like texture. The cheese shows off the beauty of the certified organic milk from The Grey Barn’s herd of grass fed cows, and changes as the cows’ diet does throughout the seasons.
Pairing notes: Sparkling wines like Champagne (rose Champagne is doubly delicious… think strawberries and cream!) rose wines of all kinds, crisp dry cider, wheat beers.
We suggest you serve Eidolon with crisp green apple, light honey and toasted bread. Switching the apple and honey for a favorite marmalade makes Eidolon a delicious breakfast treat. And with an acidic vinaigrette, Eidolon makes a wonderful salad topping.
Ingredients: Pasteurized certified organic milk, salt, cultures, enzymes

We believe supporting local builds a stronger community. We collectively support friends, neighbors, and colleagues to make and grow the things they love. In doing so, we get fresh goods made with care and we support a thriving local economy.
Seasons change fast in New England and we are committed to only selling what is available locally. We believe seasonal eating supports our farmers and connects us to place. When you buy from our market, you know you are eating in season.
Small farmers and small producers struggle to connect to you, the consumer. We want shopping local and supporting our neighbors to be easy and we believe Pip & Anchor does just that. All local, all season, all in one place.
