    Introducing the bottle that's got all of the sommeliers on the island dancin' the happy dance. This one has been the talk of the town to those that have tried it and we are all about it. This wine has such a cool straw color and it sings in the glass. It's what I like to call a "thinking wine." Meaning, you're going to taste something different with every sip. It's a refreshing, lively herbal Pétillant Naturel with an endless drinking pleasure

    Mathias, Viktoria, and Leonhard Schödl 

    care deeply about wine and where it comes from. They've worked hard in recent years to convert their family winery to complete organic production. Mathias focuses on biodiversity in the vineyards; 

    wild herbs, grasses and chamomile grow between the vines to provide living space for beneficial insects such as butterflies, ladybirds, and earthworms.

    Tasting notes: Pears, peaches, zested lemon, and green grapes. 

    What is pétillant naturel or pet nat? It's any sparkling wine made in the méthode ancestrale, meaning the wine is bottled before primary fermentation is finished, without the addition of secondary yeasts or sugars. It ferments in the bottle. Thus, pet nat wine is a low sugar wine.
