Maitake Soy Sauce

Moromi's special, limited issue Maitake Soy Sauce is brewed from locally foraged mushrooms that were hand picked by our very own James Wayman during the 2021 season. These were blended with our organic soybean and wheat koji into a sea salt brine and then barrel fermented at our workshop over the past year. The maitake mushrooms really amp up the umami flavor resulting in a super rich and delicious soy sauce!
