Chanterelle Soy Sauce

Moromi's Chanterelle Soy Sauce is brewed from locally foraged chanterelle mushrooms that were hand picked by James Wayman during the 2021 season. These are then blended with organic soybeans and wheat koji in a sea salt brine and barrel fermented at their workshop over the past year. The result is a special seasonal soy sauce that combines the full flavored umami of our shoyu coupled with delightful lingering chanterelle notes.
